I am off to Disney for Christmas Eve and Christmas day – returning the day after Christmas.

Gloomy Day

I had to go and brag yesterday about how beautiful it was… I officially jinxed it..

Look at how gloomy.. bleck… :/

Obviously some cheer was in order.. so a nice Green Monster did the trick. I can honestly say I was never one to think I would ever drink spinach – but, OSG turned me on to these and now… I’m hooked.

Saturdays at my house are usually filled with getting up at a decent hour, getting ready, and running errands till’ late in the evening – It was nice to have a Saturday where it was rainy and I could catch up in blogland (which I have been running behind on).

I caught up soo much that I realized I wasted (wasted is such a strong word.. maybe I should say “I realized I had happily spent”) almost all day on the computer. Am I the only one who does this – It feels like 30 min. but in reality it’s been about 3 hours?

Left over soup? Yes Please..

I should also mention that I took the advice of the wonderful Gabriela at Une Vie Saine, and made Super Charge Me! Cookies!

I have to say these are verrry good! These are what I would refer to as a chocolate chip oatmeal cookie on steroids 🙂 (Like that word play don’t ya) haha.. I should mention I’m kind of a cheeseball..

I must admit I did make some substitutions.. The picture includes

  • Oat Flower
  • Oats
  • Mini Choc Chips
  • Chia Seeds
  • Walnuts
  • Dried Cranberries
  • Mix It Up!

Wet Ingredients:

  • Fresh Ground Flax Seed Meal
  • Peanut Butter
  • Maple Syrup
  • Honey
  • Water
  • Vegetable Oil

Mix it Alllll Up …

Following Gabriela’s cheat – 1/4 cup measurer

Pop in oven..

BEAUTIFUL..

When you want something sweet, but want it to be healthy as well – These are beyond perfect. These are added to the recipe book!

For those wondering (Because I ALWAYS get asked why her name is Pooka) – Ever watch the kid movie Anastasia? The one where Meg Ryan and John Cusack are the main characters?? Welll… Meg Ryan’s (Anastasia) dog is named Pooka.. ta da…. so therefore my dog is named after it.. ❤

TGIF <3

I would like to start off by saying what a beautiful day it was today in good ole’ Florida ..

Beautiful… but, Chilly..

I don’t know what it is about chilly weather but, it seems to makes me lazy (probably because we don’t get too many chilly days here), but you know what I mean, I would rather stay in bed with a good movie and cuddle with my three little dachshunds – Although if my dad was reading this he would probably say “any weather makes you lazy” – but, that’s just simply not true 😉

That’s why I had to whip up a batch of “Lazy Day” Broccoli, Cauliflower, and Cheese soup 🙂

Ingredients:

  • Vegetable Broth
  • 2 Bags of Steam bag Broccoli
  • 1 bag of Steam bag Broccoli & Cauliflower
  • Bag of Fav. Shredded Cheese
  • Velveeta
  • Onion
  • Milk
  • Butter
  • Flour

First Simmer your Veggies in the Veg. Broth in a Soup Pot

In a sauce pan melt 2 tblsp of butter with a finely chopped onion – Once melted mix in 1/2 cup of flour and 2 cups of milk to make a roux.

Once thickened mix with Vegetables

Add 8 ounces of velveeta (I think velveeta adds a little richness – but, I don’t like the flavor if you just use velveeta, plus it’s obviously processed sludge. So this seems to be a good amount without the it tasting like velveeta soup) and 16 ounces of shredded cheese.. Stir until melted…

Yum 🙂
